Chania - Take 2

I always get a case of the Sundays. Always. So last Sunday to cheer myself up, I decided to make a meal inspired by our trip to Chania, Greece, last summer. You might remember that I posted another recipe inspired from that trip here.

This is what you need:
  • Sweet potatoes
  • Yellow onion
  • Garlic
  • Borlotti beans
  • Zucchini
  • Canned chopped tomatoes
  • Dried paprika
  • Mint

The sweet potatoes were cut into thin, long pieces and placed in the oven. I love sweet potato fries. These turned out a bit soft since I crammed the oven dish, but it didn't really matter. Still super tasty.

Meanwhile, fry chopped onion and garlic until soft. Add Borlotti beans and zucchini. Let it all fry for a few minutes and then add lots of dried paprika.

Add the canned chopped tomatoes and the mint. I love mint!

Let the bean stew boil under a lid while you wait for the sweet potato fries.

I served this with spicy cheese dip (another post with that recipe coming up). My husband came into the kitchen and exclaimed: "Smells like Greece!", so it felt like a pretty successful attempt at bringing some holiday feeling into a otherwise gloomy March Sunday.
