Carrot soup

Carrot soup! Enough said.

This is what you need:
  • Carrots
  • Red bell pepper
  • Shallots
  • Garlic
  • Canned crushed tomatoes
  • Coconut milk
  • Stock
  • Thyme

Chop up all the vegetables and bake them in the oven for about 30 minutes.


Transfer the vegetables to a saucepan and add the crushed tomatoes and the coconut milk.


Add stock and let the soup cook for about ten minutes under a lid. Mix until smooth and serve with thyme on top. Yum!
